It is the 29th day of Ramadan and the month is almost drawing to a close. Before we know it, Eid will be upon us. Well since I am a mum of two extremely mischievous kids, I barely am able to dedicate too much of my time making laborious or even fancy desserts. I am the one who is usually struggling to complete my various responsibilities around the house. Consequently, I try to make meals which require less efforts and manage to look pretty too. I have decided to try out this trifle for Eid Dessert.

Also desserts are probably the favourite meal of my kids . As I am sure you all know it was also the favorite meal of beloved Prophet Muhammad   sallallaahu  `alayhi  wa  sallam ( may  Allaah exalt his mention ) .Aa’ishah  may  Allaah  be  pleased  with  hersaid: “Allah’s Messenger  sallallaahu  `alayhi  wa  sallam ( may  Allaah exalt his mention )used to love sweets and honey. [Al-Bukhari and Muslim]

Imaam An-Nawawi may  Allaah  have  mercy  upon  him said: ‘(Sweet) in the narration refers to both kinds of sweets, natural and prepared, as reported from Ibn Battaal may  Allaah  have  mercy  upon  him.

Trifles in the English Cuisine is a dessert having layers of sponge cake often soaked in a fruit juice. It is further topped with a jelly, some custard and even cream. This particular trifle that I tried looks good enough to be a party-pleaser and is also ready in little time. If you like you may purchase any sponge cake from your local superstore. Further you may replace the raspberry with any other berry such as Strawberry or Blackberry or a combination of 2 or more. Whatever you do it is a simple and delicious desserts which will be loved by kids and adults alike!

Raspberry Trifle

INGREDIENTS

Vanilla Sponge Cake

Buy from Market or follow any recipe that you like.

Thick Vanilla Custard

I cup milk

2 tbsp of custard powder

2tbsp of sugar/60 gms condensed milk

To Prepare Raspberry Jelly

300g raspberries, cut into smaller pieces

1/4 cup (50g) sugar

1 tbsp (15ml) water

METHOD

  1. To prepare raspberry jelly-In a saucepan put the raspberries, sugar and water. Bring to a simmer, stirring occasionally. Press the raspberries with the back of the spoon . Simmer until the mixture is thick, for about 15-20 minutes.  Remove from heat and let cool completely before using.
  2. For thick vanilla custard. Boil a cup of milk. Lower temperature. In another cup mix 2 tbsp of custard powder in 3 tbsp of cold milk. Add to the simmering milk. Keep stirring to ensure no lumps are formed. Now add sugar/ condensed milk. Mix. Turn off the stove. Let cool.
  3. In a glass place a layer of vanilla sponge cake,
  4. on that spread a tbsp of raspberry jelly.
  5. Follow this up with a layer of thick vanilla custard.
  6. Repeat the above steps.
  7. Decorate with a layer of whipped cream.
  8. Sprinkle with fresh raspberries.
  9. Dust with powdered icing sugar.
